We look for profound wines to both challenge your senses and keep up with your thirst. We’ve spent years working in restaurants buying wine and creating beverage programs with depth and personality. When writing wine lists, we let the synergy that happens between wine and food inspire our selections. Creating a great pairing, no matter how simple, is magical.

I believe all winemakers goal is to make a product that is a direct reflection of who they are. But what if you’re self-centered? Impulsive? Or just an asshole ? We live in a world where everything means everything so nothing means anything and marketing teams take full advantage. Too many wineries spend 90% of their money on marketing and 10% on the product. The story may sound too good to be true because it is. Great winemakers aren’t writing the stories of their wines; they are simply translating. They are able to translate the history of their land, the generations that came before them, the vintage that Mother Nature gave them and they do this quietly, by listening to everything around them. Honest stories with passionate voices.

Étienne Calsac

Definitely a young gun of Champagne making pure, expressive champagne. He took over the family estate in 2008 and has converted to fully biodynamic farming. He makes very small quantities (about 3,500 bottles worldwide) and owns a total of 2.8-odd hectares. He is also fortunate to have access to the monopole Clos des Maladreries with extremely limited bottling.
